Heart Healthy No Bake Cherry Cheesecake

Ingredients:

Graham Cracker Crust:

  • 1/2 cup of crushed graham crackers
  • 2-3 tablespoons of melted butter

Cheesecake Filling:

  • 4 ounces of softened cream cheese
  • 2/3 cup of Greek yogurt
  • 2 tablespoons of maple syrup
  • 1 tablespoon of fresh lemon juice

Cherry Topping:

  • 1 cup of halved, pitted cherries
  • 1 tablespoon of maple syrup
  • 1 tablespoon of fresh lemon juice
  • 1 teaspoon of water
  • 1 teaspoon of corn starch

Preparation Instructions:

  1. Wash your hands thoroughly with soap and warm water.
  2. Add all cherry topping ingredients to a sauce pan,
  3. Cook over medium heat for 5 minutes, gently stirring, until it thickens and forms into a sauce.
  4. Remove cherry topping from heat and allow to cool while preparing the cheesecake filling and crust.
  5. Prepare filling in a medium sized mixing bowl. Add softened cream cheeses, Greek yogurt, maple syrup, and lemon juice.
  6. Mix with an electric mixer for 2-3 minutes on high until smooth. Refrigerate for 20-minutes.
  7. Prepare crust by combining graham cracker crumbs and melted butter in a small bowl. Distribute the crust evenly among lidded containers.
  8. Divide the cheesecake filling evenly among the containers and gently tap container on countertop to settle the layer.
  9. Top each jar with cooled cherry topping.
  10. Serve immediately or chill in the fridge until ready to serve.
