Beef and Mushroom Burgers

Makes: 8-10 (4-in.) patties

Ingredients:

  • 8 ounces white button mushrooms, cleaned & roughly chopped
  • ½ small white onion, roughly chopped
  • 2-3 gloves garlic, roughly chopped
  • 2-3 teaspoons choice of seasoning (smoked paprika, chili powder, oregano, etc.)
  • 1 teaspoon black pepper
  • Pinch of salt
  • 1 pound (16 ounces) lean ground beef (93% or leaner)
  • 2 tablespoons tomato paste, ketchup or barbecue sauce

For Serving:

  • Whole grain hamburger buns
  • Whole grain sandwich thins
  • Bed of leafy salad greens
  • Slice of cheese
  • Leaf lettuce
  • Sliced tomatoes
  • Sliced onion rings
  • Condiments of choice

Preparation Instructions:

  1. Wash your hands thoroughly with soap and warm water.
  2. In the base of a food processor, add mushrooms, onion, garlic, seasonings, salt and pepper. Pulse several times until mushrooms and onions are of similar size. Pulsing will help release moisture from mushrooms to help form patties. Once well combined and chopped, transfer to a large mixing bowl.
  3. Add ground beef and choice of flavor component to the mushroom mixture. Use your hands or a large spoon to gently mix all ingredients together.
  4. Use your hands or a measuring scoop to portion mixture into equal-sized patties. Gently shape into patties about 1-inch thick and place on baking sheet or plate.
  5. To pan-sear: Heat large cast iron skillet* or non-stick griddle over medium-high heat. Once hot, place patties on skillet/griddle being sure not to crowd the space. Cook each side 5-7 minutes or until patty reads an internal temperature of 160 degrees F. *If needed to prevent sticking, coat pan with 1 tablespoon cooking oil prior to adding patties.
  6. To grill: Pre-heat grill to medium-high heat. Once hot, place patties on grill, cover, and cook about 5-7 minutes each side or until patty reads an internal temperature of 160 degrees F.
  7. Serve with choice of accompaniments with burger buns, sandwich things, or over a salad.
  8. Store leftovers in an airtight container in the refrigerator for 3-4 days or in the freezer for up to 1-2 months.

Health Tip:

Mushrooms act as a "meat extender" offering more fiber and nutrition in your traditional beef patty. Pair mushrooms with beef in meatballs, pasta sauces, and tacos.
